Premium Boneless Cuts Include:
- Tenderloins (2 packaged together)
- Backstraps (cut in half, 4 packages)
- Sirloin Steaks (4 packages of 4)
- Round Steaks (5 packages of 2)
- Shoulder Steaks (2 packages)
- Ranch Steaks (2 packages)
- Roasts (1–4, ~3 lbs each)
- Burger (~1.5 lb packages, about half of total yield)
Add pork fat to burger for $6 or beef fat for $9. Unwanted cuts will be ground into burger or made into sausage.
